Carrots were introduced to England in the 15th century. These varieties were purple or yellow with long roots. The word carrot was first recorded in English in the 16th century after orange carrots had been bred, in the Netherlands, to improve flavour.

Parsnips were often used to sweeten pies and puddings, before cane sugar became widely available.

Scotland’s famous dish- neeps and tatties- is a combination of parsnips and potatoes.
